How many pages of print design do you need?

Front Label - Open to letting the design dictate the size, but it must fit on a 750ML wine bottle without needing to turn the bottle to read the label. The initial size that we considered was 5 1/8" x 3 1/8".
Back Label - Open to letting the design dictate the size, but it must be no larger than the front label. Ideally, it would be smaller. We considered a 3" x 2 3/4" label.

25-55 male and female, college educated professional, minimum $60K income, who is willing to make extra travel time to enjoy good food since he or she works hard and wants to indulge when he or she is "off the clock". This person enjoys an active lifestyle -- in the gym or outdoors -- but can also be equally happy reading a good book.
What 3 things would you like to communicate to your audience through your print design?

Style and Concept
What print design styles do you like?
The label that stands out is the one from T-Vine (see attached). We're not interested in an embossed or raised gold treatment, but we like the simplicity and uniqueness (without the stuffiness) of the label with the gold vine against the black background. We're interested in a label that plays on the "point" in the brand name: Conn Point Estate.
What colors do you want to see in your print design?
Open to colors that differentiate the wine label from the usual premium ones in the market, especially from wine labels from Conn Valley and from Conn Creek (simply b/c of the similarity in the brand name). Our initial thought was a wine label with bold colors, like black and red. However, we're also open to neutral colors if the design is unique enough.

What adjectives should best describe your print design?
Witty (but not comical). Premium. Simple. Bold OR different. Eye catching (stands out on a shelf).
How will you use the print design?
On a wine label -- front and back.
Please refer to General Art Instructions in the attached file for file output as it relates to die line requirements, bleed, and "stay away area."
Note: Since the label will be used from year to year (but the actual year on the label needs to be changed to reflect the harvest year), we would like a file that enables us to easily change the year out for each new year's wine harvest.
