Please find attached my concept for the Trinity Travel site.
The front page highlights four of the main "themed" holidays that you offer, as these probably fit in with the visitors coming to your site - these visitors will immediately be able to see that you can provide exactly what they are looking for.
Users looking for specific Destinations can easily drill down to those using the left menu bar.
I've also added a right menu bar for your Travel Tools, as I understand a big focus of yours is not only in providing the holiday, but helping people prepare themselves for it.
The photos of course, can be changed for your own photos (or, if you like we can license the photos I used from iStockPhoto).
I look forward to your feedback and am happy to make modifications and see this design evolve to match your requirements.
